Black Bean Burgers with Cilantro Lime Mayonnaise

--------------INGREDIENTS-----------------
1 Tbsp Olive Oil
1/2 C Carrots, peeled and shredded
1/2 C Corn (White)
1/2 C Corn (Yellow)
1/2 C Roasted Red Peppers
1/2 C Onion, minced
1 Tbsp Garlic, minced
1 C Firm Tofu
2 Cans Black Beans, drained and rinsed
3 Tbsp Lime Juice 
3 Tbsp Fresh Cilantro
1 1/2 tsp Cumin
1 Tbsp Chili Powder
Salt
Pepper
2 C Panko Bread Crumbs
2 C Vegetable Oil
Buns
Avocado
Swiss Cheese
Mayonnaise
Tomato

---------PREPARATION--------

Heat olive oil in a skillet and add the carrots, corn, onion and garlic. Cook for 5 minutes. Add the roasted red peppers and set aside to cool.

Place the tofu in a food processor and puree until smooth. Place in a large bowl and set aside.

In a different bowl combine  beans, , cumin, chili powder, salt, pepper, and 1 Tbsp of the lime juice and cilantro.  Mix together and then add the mixture to the food processor.

Once the beans are coarsely chopped, add the mix to the bowl with the tofu.

Add panko bread crumbs to the large bowl and mix all of the ingredients together. Form into 8 patties.

Heat vegetable oil in a skillet on high heat until the oil bubbles. Place the patties in the oil and cook for 5 minutes on each side or until each side is crispy.

White the patties are cooking combine 6 Tbsp mayo, 2 tbsp lime juice, 2 tbsp cilantro, salt and pepper together.  Mix together.

Once the patties are cooked, place them on buns and top off with the cilantro-lime mayo, avocado, cheese and tomato. 

I LOVE these patties!! :) So excited to have changed it up a bit. Adding the tofu really does wonders.
