Turkey Chili

Turkey Chili

-------------Ingredients------------
2 C Chopped Onions
4 Garlic Cloves, minced
1 C Chopped Green Pepper
1/4 C Olive Oil
2 Cans Stewed Tomatoes, crushed
1 Can Kidney Beans, drained
1 Can Black Beans, drained
2 Tbsp Tomato Paste
3/4 C Chicken Stock
2 Tbsp Chili Powder
1 Tbsp Cumin
1 Tsp Oregano
Salt and Pepper
1 Lb Ground Turkey
Sugar
Cheddar Cheese, Sour Cream, and Chips for garnish

-------------Preparation------------
In a large stockpot cook the onions until translucent. Add the green pepper and cook for another 2 minutes. Add the garlic, chili powder, and cumin. Cook for another minute or two.

Add the tomatoes, tomato paste, stock, beans, oregano, salt and pepper. Bring to a simmer and reduce heat to low.

At this point cook your ground turkey in another pan until browned. Once the meat is fully cooked, add the turkey to your stockpot. Cook the chili for an hour on simmer.

Taste the chili and add more salt if needed. Additionally add about 1-3 tsp of sugar.

Pour your chili into bowls and garnish with cheese, sour cream, and chips.

Enjoy!
